Vegetarian Breakfast Skillet
Ingredients:
2 eggs
1 cup diced mushrooms
1/2 cup diced bell peppers
1/2 cup diced tomatoes
1/4 cup diced red onion
1/4 cup spinach
1/4 cup grated cheddar cheese (optional)
1 tsp olive oil- Salt and pepper to taste
Instructions
1. Heat olive oil in a skillet over medium heat.
2. Add the diced mushrooms and red onion and sauté until they start to soften.
3. Add the bell peppers and tomatoes to the skillet and continue to cook for a few more minutes.
4. Add the spinach and cook until it wilts.
5. Make two small wells in the vegetable mixture and crack an egg into each well.
6. Cover the skillet and cook until the eggs are done to your liking (for runny yolks, it's usually about 4-5 minutes).
7. If desired, sprinkle with grated cheddar cheese and cover the skillet until the cheese melts.
8. Season with salt and pepper to taste.
9. Serve hot and enjoy your vegetarian breakfast skillet!
