Hello again my dear friends,

My family take a well earned break today from posting to enjoy a recharging countryside retreat - see earlier post entitled "Get Away from it All" to Stressbust™ For a Bit" for the importance of this. 

So I take this opportunity to show you how to make perfect ceasar salad ideal for warm summer evenings that deserve the lighter meals that fill you but not cause the evening tummy swelling which is so important to good sleep and stressbusting™.

For me the food we eat is part of making our lifestyle a one we continually enjoy being part of, a theme explained in further detail in the previous post entitled "Create a Stressbusting™ Lifestyle you don’t “Need a Vacation” away from". 

And for me equally the appearance of the dishes served are as important as appearances for people - see "Groom, Groom, Groom to Stressbust™!" - a fact which come out loud and clear in my recipes.

I make this particular dish simple and colourful with constituents that are accessible at most local supermarkets for busy people.

We start with the list of ingredients as follows:

- One bag loose leaf romaine lettuce chopped

- 1 red pepper 

- 1 t/s virgin olive oil

- parmasan shavings

- boiled egg whites chopped into small cubes (optional - 1 per 2 people)

- anchovies (optional)

- small bag of croutons

- low fat ceasar dressing

- lemon juice

- ground black pepper (to taste)

We then turn to the preparation of the dish which is tantalising to all the senses at once.

Firstly, we wash the chopped romaine lettuce and place in big bowl. Traditionally the romaine lettuce is used in ceasar dishes because despite moisture added it keep its firm, fresh tasting crispness and is less earthy than alternative options.

We then slice the pepper into thin strips in a separate dish, top lightly with olive oil, stir together and add this to the romaine lettuce. 

Then put the parmesan shavings, egg whites / anchovies (as desired) and croutons on top of lettuce mix, stirring again.

Finally we add the low fat ceasar dressing and stir thoroughly so tastes start to merge together nicely and the salad mix is coated but not saturated. For those on calorie managed diet a little low fat natural yoghurt instead of dressing could add the same nice moisture and driver strong antibody protection for your gut in process.

Add lemon juice alongside pepper to taste and there you have it, a simple but colourful, brimming with health "Ceasar Salad Santiago" style. 

For some extra punch if that your English cup of tea, add a sprinkling of chilli flakes or a little dijon mustard!

Be sure to eat this dish fresh while salad hold its shape as I have found at times in restaurants that kitchen delay results in the dish becoming sloppy when eventually served as moisture absorbs a little too much into the lettuce and croutons.
