Hello my friends.
I am now set up in my stressbusting™ kitchen in my excellent new home, and so today I prepare fabulous and simple stressbusting dish for Winter Wellness.
I am taking an Italian theme I learned from my Grandmother Giulia and creating my famous “Tagliatelle Santiago”, renowned worldwide for its nutritional benefits and pure heartiness, just for you.
It take no more than 15-20 minutes to prepare so fits into busy schedules, uses ingredients readily available from local marts can feed whole family of 3-4 for very limited cost “the Old Italian Way”.
This dish is filling without being overwhelming and is fully suitable for vegetarians, as this is an important consideration.
The easily accessible ingredients are as follows:
2 heaped tablespoons low fat cream cheese (or natural yoghurt if preferred)
1 heaped tablespoon of pesto
One small fresh onion finely chopped
½ teacup of very fresh finely chopped broccoli
3 cloves of garlic, finely chopped (we love our garlic for its heart strengthening qualities, but you can reduce or increase the number of cloves depending on your taste)
Half a small saucepan of fresh wholemeal Tagliatelle pasta
Pinch of salt
Pinch of black pepper
Parmasan shavings
One packet rocket salad
12 cherry tomatoes, halved
And now for the mastery of preparation:
1. Heat some sunflower oil on a low heat gently in a frying pan
2. While doing this, place the Tagliatelle in a saucepan of boiling water with a drizzle of Virgin Olive Oil and a pinch of salt and allow to cook while sauce is being prepared
3. Mix the cream cheese and garlic pesto in the frying pan and fry for 5-6 minutes on a very low heat, continuing to stir throughout
4. Then add the onions, garlic and brocolli to the frying pan and fry until the onions start to brown, continuing to stir throughout
5. Drain the Tagliatelle once it is to your texture taste, but leaving a little of the boiled water in the saucepan
6. Add the Tagliatelle and that retained boiled water to the frying pan mix
7. Add the salt and pepper then heat for a further 2 minutes, stirring throughout
8. Serve up onto a plate and shave parmesan on the pasta mix according to preference
9. Add a side serving of multi nutritional rocket salad topped with cherry tomatoes.
Et Voila, you have a wonderful low maintenance, beautifuy presented dish brimming with Wellness and engaging all the senses.
And because we use the wholemeal pasta, it is lower calorie and easier on the digestive tract.
